One of my favorite rites of spring is maple tapping time! I went with Chloe on her school field trip today to tap maple trees and learn about how maple syrup is made. The sap had really been running! Then it was boiled down in this giant cauldron. It really is a lost art.
The kids got to taste a bit of sweet mapley goodness and we even saw a rooster on our morning at the farm!

How magic! I have never seen that in my life...can you believe it? Just read about it in Little Town on the Prairie! I think I live on a different planet some days!

Did you know it takes 40 gallons of sap to make a gallon of syrup? We have lots of sugar houses here. I love it!
Right, I've just learnt something! I had no idea that's how maple syrup is made. The mind boggles.

Nothing beats REAL maple syrup! So much better than that fake stuff! My hubby and I even used vintage maple buckets for our floral containers/centerpieces at our wedding. I wish we had maple trees here in California!
